This is my recipe for a healthier version to Rhubarb Crumble.

There is no sugar in any of the ingredients just a non calorie sweetener ( Natvia ) and it is made with a low fat spread.

So it’s all the taste and non of the guilt, even the custard has non calorie sweetener in it.

  • 650g rhubarb sliced.
  • 1 tsp ground ginger.
  • 1 tsp non calorie sweetener ( Natvia ).
  • 1 tbsp water.
  • 50g gluten free plain flour.
  • 20g low fat spread.
  • 50g gluten free oats.
  • 2 tbsp sweetener ( Natvia).

  1. Place the rhubarb, ginger, sweetener (1tsp), and water into a saucepan and boil until cooked but still has some lumps in leave to cool.
  2. In the meantime rub your flour, sweetener (2tbs), and fat together until like breadcrumbs.
  3. Mix in your oats in and combine together.
  4. Preheat your oven 180c / 160c/ gas 4.
  5. Split your fruit between four oven proof dishes.
  6. Top the fruit with your crumble mix.
  7. Place in the oven for 30 minutes.
  • Serve with custard made with skimmed milk and sweetener.
