This recipe makes a delicious, moist fruit tea loaf that is gluten-free and dairy-free. It can be enjoyed on its own with a cup of Yorkshire tea or with butter and cheese, especially Wensleydale cheese.


Freshly made black tea350 ml
Mixed dried fruit350 g
Medium eggs2
Light brown sugar200 g
Mixed spice1 tsp
Gluten free self raising flour270 g
Xanthan gum1/4 tsp

Nutritional Information:


  1. Soak the fruit in the tea in a large bowl for at least 4 hours or overnight.
  2. Preheat the oven to 160°C fan/180°C/gas 4. Grease and line two 1lb tins.
  3. Add the eggs to the mixture of fruit and tea and mix thoroughly.
  4. Add the sugar and mixed spice and mix until combined.
  5. Add the flour and xanthan gum and mix until thoroughly combined.
  6. Pour the mixture evenly into the two tins and bake in the oven for 50-55 minutes or until a skewer comes out clean.
  7. Allow the cakes to cool in the tins before removing them.
