Here is my recipe for sun dried tomato and caramelised onion focaccia, its similar to the garlic and rosemary focaccia I made last week.

I have put sun dried tomato into the mix and fried off some onions in balsamic vinegar.

I also didn’t make it in a tin I just did it free hand and it makes it look rustic.


  • 7g Dried yeast (I get the green Allinsons) make sure its gluten free.
  • 1tsp caster sugar.
  • 200ml warm milk / or use a dairy free version.
  • 250g Gluten free plain flour.
  • 1tsp xanthan gum.
  • 1 large free range egg.
  • 3 tbsp extra virgin olive oil, extra for greasing.
  • 1tsp fine salt.
  • 1/4 tsp bicarbonate soda.
  • 2tsp white wine vinegar.
  • Sun Dried tomatoes sliced into small pieces
  • Red onions sliced
  • Balsamic vinegar.
  • Sea salt.


  1. Preheat the oven to 190c or 170c if fan assisted, Gas mark 5.
  2. Mix together the yeast, sugar and a splash of milk, (leave the rest for later) until frothy.
  3. Mix together the flour, xanthan gum, egg, oil, and salt together until smooth in a mixer.
  4. Scrape in the yeast mixture into the dough mix and mix together thoroughly.
  5. Mix the bicarbonate soda and the vinegar together so it fizzes. Add to the dough.
  6. Add the dough to the oiled bowl and cover with oiled cling film, and place in a warm place to rise for an hour.
  7. On a baking sheet oil with olive oil and tip the dough and shape it.
  8. Add the onions on top and sprinkle with salt.
  9. Get your finger and wet it and make dimples in to dough and drizzle oil over.

    Place into the oven for 15 to 20 minutes or until golden brown.
