I love scotch eggs I make these all the time and they are so simple to make and I bake them in the oven rather than deep fried.

Ingredients:

  • 2 large free range eggs
  • Sausage meat, I used Squig square Cumberland British pork sausage.
  • Bread crumbs fresh or dried..
  • 2 Eggs for egg wash
  • Fry light for spraying

Method:

  1. Preheat your oven 190c / 170c / gas 4.
  2. Boil the two large eggs for 7 minutes.
  3. Whisk the other two in a bowl for egg wash. In another bowl put your breadcrumbs.
  4. The squig square is a packet of 4 squash two together and flatten out.
  5. When you the eggs are boiled put them into ice cold water. Then remove and discard the shells.
  6. With wet hands wrap the sausage meat around the egg.
  7. Dip the wrapped egg into the egg wash then in the breadcrumbs.
  8. Place on a baking sheet and spray with fry light.
  9. Place in the oven for 30 minutes until cooked.

These are lovely hot or cold and make a nice snack or good as a picnic food, or as a brunch.
