Gluten Free Mac n Cheese with Garlic Bread is a very quick meal to do it takes a matter of minutes to make in the pressure cooker. I use a Pressure King Pro.

It’s in a rich cheesy sauce and I have added bacon lardons.

It can be made dairy free if you use dairy free cheddar and cream cheese from the free from sections in the supermarket.

Ingredients:

  • 250g gluten free macaroni pasta shapes ( sainsburys).
  • 700 ml water.
  • 1 tsp mustard powder.
  • 1 tsp onion granules.
  • 1tbsp butter/margarine/ or dairy free.
  • Salt and pepper to season.
  • Cooked Bacon lardons I used Asda lean.
  • 200g Cream Cheese / use a dairy free version.
  • 150g cheddar or dairy free version.
  • Schar ciabatta rolls
  • Garlic butter or dairy free alternative.
  • Parsley

Method:

  1. In your presure cooker add macaroni, water, onion granules, mustard powder, salt and pepper.
  2. Set to presure cooker and set the timer to 6 minutes.
  3. Quick release the pressure and stir gently
  4. Stir in the bacon, cream cheese and cheddar, stir gently until the cheese has melted.
  5. Whilst that is cooking preheat your oven 200c
  6. Slice the ciabatta in half lengthways spread your garlic butter and parsley over the rolls.
  7. Put in the oven until toasted.
  8. If you do not have a presure cooker; cook the macaroni to packet instructions.
  9. Drain the pasta.
  10. Add the onion granules, mustard powder, salt and pepper, bacon.
  11. Mix in the cream cheese and cheddar and stir until melted.
