We love curry in our house I could eat it every night if it was up to me.

This gluten free chicken Balti recipe can be made so easily and if you make it before you need it you can warm it up.

I made gluten free garlic and coriander naan bread and gluten free onion bhajis to accompany the curry, (click the links to see the recipes), to make it more authentic.

Ingredients:

  • 1tbsp oil
  • 1 large onion chopped.
  • 1 Twisted Curry Co Balti curry mix.
  • 2 tsp garlic puree.
  • 2 tsp ginger puree.
  • 3 chicken breast chopped up.
  • 1 green pepper sliced.
  • 1 red pepper sliced.
  • 1 yellow pepper sliced.
  • 1 tin of chopped tomatoes.
  • 1 tbsp tomato puree.
  • 300ml water.
  • Chopped coriander

Method:

The Twisted Curry mix does have a recipe on the packet if you wish to follow it, but I prefer to make my own recipe.

  1. Heat the oil in a wok or deep frying pan.
  2. Add the chopped onions and fry for 2 minutes.
  3. Mix the balti mix with the garlic puree, ginger puree and a bit of water to make a paste.
  4. Add the chopped chicken to the onions and fry until sealed.
  5. Add the curry paste and stir to coat the chicken and onions.
  6. Add the tomatoes and tomatoe puree.
  7. Add the peppers, coriander and water and bring to a boil and simmer for 20 minutes

If you wish this curry can be served with rice and coriander.
